A former gas station and mechanic shop on a bend in the Ohio River has reopened as a coffee shop in Dayton, Kentucky. The building is about 10 minutes from downtown Cincinnati and has become a popular stop for residents in Northern Kentucky.
Elliott Coffee opened in 2024 after Isabelle, Asa, and Elijah Knapp purchased the property. The family left the gas pumps behind to focus on serving specialty coffee and hosting neighbors. Elijah Knapp said the goal is to restore the feeling of a small-town community that he believes has largely disappeared.
"I think that the idea of, like, the small-town American community has mostly been lost," Knapp said. "Everyone longs for this idea of something that feels unique to their area."
The menu features coffee from roasters in Edinburgh, Los Angeles, and Central America. Knapp stated that the team aims to honor the labor involved in growing, processing, and shipping the beans. He described the approach as a way to respect the product rather than compete on price.
Lines of customers often form outside the shop, sometimes stretching around the block. Knapp noted that waiting in line has become part of the daily routine for many patrons. He cited the image of a dog walker grabbing a morning cup as an example of the simple experiences the café offers.
Starting the business required the Knapp family to take a financial risk. Elijah left his software career to manage the shop while his wife continued working as a nurse. The couple learned they were expecting a child shortly after signing the lease, which increased the stakes for the venture's success.
The co-founders said the steady flow of customers has validated their decision to prioritize connection over speed. Knapp acknowledged that the visit takes longer and costs more than a typical drive-thru stop, but he said customers leave satisfied with the experience.
